I’ve been looking for a good way to use the powerfood black strap molasses in tasty recipes and alas, I created one!  My friend Rebekah makes delicious pumpkin and chocolate chip cookies, so I took the idea from her, and threw in some little extras.

2 c. flour

1 c. butter (2 sticks)

1 c. pumpkin

1 c. wheat germ (or wheat bran)

1 c. sugar

2 Tbs. black strap molasses

1 egg

1 tsp. baking soda

1 tsp. cinnamon

1 tsp. vanilla (I used almond extract)

1/2 tsp. salt.

Ghirardelli’s semi-sweet chocolate chips (1/2 bag – full bag, you decide)

*Mix wet ingredients first, then add in dry.  Scoop out into little globs on baking sheet and cook at 350 degrees for 8-10 minutes.

As a pregnant or lactating woman, you are more susceptible to have low iron levels.  This is normal for this  stage of your life, but it can make you tired and feeling weak throughout the day.  The reason that you have low iron levels is because your blood count increases up to 50% during pregnancy and more iron protein is required to get oxygen to cells throughout your body.  So nibble on some of these cookies (or ALOT) and feel a bit better!
